Rice and Lentil Soup Recipe

Rice and Lentil soup

One of the easiest ways to cook lentils or any beans and pulses, is in a crockpot as they take a while to cook.

  • 2 cups of brown lentils, rinsed and drained

  • 2 cups of long grain rice, rinsed and drained

  • 1 large carrot, chopped

  • 2 ribs of celery, chopped

  • 1 onion, chopped

  • 2 cloves of garlic, finely chopped

  • 9 cups of water

  • 3 vegetable stock cubes

  • 4 sprigs of fresh thyme

  • Freshly ground black pepper

  • 1 tablespoon sea salt

  • 1 cup of mushrooms, sliced

Place all the ingredients in the crockpot except the mushrooms.

Cover the crockpot and cook on LOW for 7 hours.

Add the mushrooms to the crockpot and cook on HIGH for another 30 minutes. Serve the crockpot rice and lentil soup garnished with fresh thyme.
