Courgettes With Oregano Zucchini Crockpot
Courgettes with Oregano Recipe
Courgettes (zucchini) cook very well in a crockpot as they contain a lot of water which is released during cooking. If you find that the sauce is too thin, then the next time you cook courgettes in the crockpot, drizzle salt over your courgettes, leave for 15 minutes, drain and then add to the crockpot and cook.
1kg courgettes, sliced
2 vegetable stock cubes dissolved in cup of hot water
1 teaspoon salt
1 clove of garlic, crushed
1 small onion, finely chopped
1 cup of tomato juice
2 tablespoons fresh oregano
2 tablespoons fresh parsley
Freshly ground black pepper
Place all the ingredients in the crockpot, except the herbs and cook on HIGH for 3 hours.
Add the fresh herbs to the crockpot, stir but do not replace the lid. This will ensure that the sauce is the right consistency when served.
