Crockpot Coq au Vin Recipe

The traditional French dish, crockpot style!

Crockpot Coq au Vin Recipe

  • 10 chicken thighs, skins removed

  • 12 shallots or pickling onions, peeled and left whole

  • 2 cloves garlic, crushed

  • 4 rashers of back bacon, sliced thinly

  • 250g button mushrooms, wiped and left whole

  • 4 tablespoons of olive oil

  • cup flour

  • 3 tablespoons of brandy

  • 2 cups of red wine

  • 2 bay leaves

  • 1 bouquet garni

  • 1 tablespoon cornflour

  • 2 tablespoons water

  • Salt and freshly ground black pepper

  • 2 tablespoons fresh parsley, chopped

Place the salt, pepper and flour into a food or freezer bag, add the chicken and shake well to coat.

Heat the oil in a large pan and fry the chicken pieces until brown.

Place all the ingredients in the crockpot/slow cooker except the cornflour, water and chopped parsley. Mix until well combined.

Cover and cook on LOW for 6-7 hours.

Mix the cornflour with the water and stir into the crockpot with the parsley.

Cook on HIGH for 20 minutes or whilst preparing accompaniments.

Serve the Crockpot Coq au Vin garnished with the chopped parsley.
