Chicken and Juniper Berry Crockpot

Chicken and Juniper Berry Recipe

  • 10 chicken thighs or drumsticks, skins removed

  • 2 bunches of spring onions, sliced

  • 1 clove of garlic, crushed

  • 20 juniper berries

  • 2 chicken stock cubes, crumbled

  • 2 bay leaves

  •  1 teaspoon fresh rosemary

  • 1 cups of hot water

  • 2 tablespoons cornflour

  • 3 tablespoons of water

  • Salt and freshly ground black pepper

Dissolve stock cubes in hot water.

Place all the ingredients in the crockpot/slow cooker except the cornflour and water. Mix until well combined.

Cover and cook on LOW for 6-7 hours or until the chicken is cooked.

Mix the cornflour with the water and stir into the crockpot.

Cook on HIGH whilst preparing accompaniments.

Remove bay leaves before serving.

Serve the Chicken and Juniper Berry Crockpot garnished with a sprig of rosemary.
