Chicken and Date Crockpot

Chicken and Date Crockpot with Thyme Recipe

  • 8 chicken thighs, skins removed

  • 3 cloves of garlic, peeled and crushed

  • 2 bunches of spring onions, sliced

  • 1 cup of pitted dates, chopped

  • 2 tablespoons of capers, drained

  • 2 bay leaves

  • 3 tablespoons of honey

  • 1 tablespoon fresh thyme

  • cup of red wine

  • 1 chicken stock cube, crumbled

  • Salt and freshly ground black pepper

Place all the ingredients in the Crockpot or Slow Cooker and mix until well combined.

Cover and cook on LOW for 6-8 hours or until the chicken is cooked.

Remove bay leaf before serving the Chicken and Date Crockpot, garnished with a sprig of thyme.

Serves 4 - 6
