Butternut Garbanzo Bean Crockpot
Butternut and Garbanzo Bean Recipe
Thyme
combines well with butternut and gives this crockpot dish a delicious undertone.

2 cups butternut, peeled, deseeded and cubed

2 cups carrots, chopped

2 onions, chopped

1 cup chopped zucchini
-
2 (14 oz.) cans diced tomatoes, undrained

15 oz. can garbanzo beans, rinsed and drained

14 oz. can vegetable soup

2 cloves garlic, minced
-
5 sprigs of thyme
-
1 teaspoon cumin
-
½ teaspoon salt
-
½ teaspoon allspice

Freshly ground black pepper
-
½ cup of feta cheese, drained and crumbled
Place all the ingredients except the feta into the crockpot and cook on LOW for 7-8 hours or until vegetables are tender.
Remove the thyme sprigs from the crockpot before serving.
Serve over hot couscous and sprinkle with the feta cheese.
