Crockpot Beef casserole with thyme

Beef Casserole with Thyme Recipe

Wonderful with garlic mashed potatoes and fresh greens on a cold winters night.

  • 500g stewing beef cut into cubes

  • 2 tablespoons olive oil

  • cup of flour

  • 1 clove of garlic, crushed

  • 1 onion, peeled and chopped

  • 1 beef stock cube, crumbled

  • cup of hot water

  • cup of sherry

  • 1 teaspoon fresh thyme

  • 1 carrot, diced

  • 1 stick of celery, finely sliced

  • Salt and freshly ground black pepper

Place the thyme and flour into a food or freezer bag, add the meat and shake well to coat.

Remove the meat from the bag, heat the oil in a pan and brown the meat.

Dissolve the stock cube in the hot water and place in the crockpot with all other ingredients except the meat.

Combine thoroughly and add the meat. Ensure that the meat is covered with the liquid in the crockpot.

Cover and cook on LOW for 9-11 hours or until the meat is tender.

Serve the Crockpot Beef Casserole garnished with fresh thyme sprigs.
