Beef and Vegetable Crockpot Soup

Vegetable and Beef Soup Recipe

A tasty and healthy dish!!

  • 1 onion, peeled and chopped

  • 500g beef shin on the bone, removed from the bone and cut into 1cm cubes

  • 6 cups of cold water

  • 1 beef stock cube, dissolved in cup of hot water

  • 2 sticks of celery, washed and cut into slices

  • 1 parsnip, peeled and chopped

  • 1 turnip, peeled and chopped

  • 1 carrot, peeled and chopped

  • cup of yellow split peas, rinsed and drained

  • 2 tablespoons of pearl barley, rinsed and drained

  • 1 bay leaf

  • Salt and freshly ground black pepper

Place all the ingredients in the Crockpot or Slow Cooker. Mix until well combined.

Cover and cook on LOW for 6-7 hours or until meat is tender and pearl barley and split peas are cooked.

Serve the Crockpot Beef and Vegetable Soup garnished with parsley sprigs.
