  • 500g lean stewing steak, cut into 2cm cubes

  • 3 tablespoons of olive oil

  • 4 tablespoons of flour

  • 3 cloves of garlic, crushed

  • 1 onion, peeled and chopped

  • 1 carrot, peeled and chopped

  • 2 sticks of celery, washed and sliced

  • 1 swede, peeled and chopped

  • 1 parsnip, peeled and chopped

  • 1 cup of broad beans

  • 300ml Guiness

  • ½ teaspoon of salt

  • Freshly ground black pepper

  • 1 bouquet garni

  • Place the salt, pepper and flour into a food or freezer bag, add the meat and shake well to coat.

  • Heat the oil in a pan and add the garlic.

  • Add the meat to the pan and brown.

Place the vegetables and Guiness in the crockpot/slow cooker and mix until well combined.

Stir in the meat and add the bouquet garni.

Cover and cook on LOW for 9-11 hours.

Remove the bouquet garni before serving.

Serve the Beef and Guiness Crockpot with creamed mashed potato and greens.
